What is a comal and what is it used for?

A comal is a flat or slightly curved pan traditionally used in Mexican kitchens to cook tortillas, toast chiles and spices, sear vegetables and warm up leftovers. It sits at the center of everyday cooking much like a skillet does in other cuisines.

Which comal material is best: cast iron, carbon steel or clay?

Each material has a different feel. Cast iron holds heat extremely well and is great for deep browning. Carbon steel heats up and cools down quickly, which is perfect for modern stoves. Clay offers the most traditional flavor but needs more care and is not ideal for all cooktops. On ComalPan we highlight the pros and cons of each option.

Can I use a comal on an electric or glass-top stove?

Yes, but you need to pick the right design. Heavy cast iron and carbon steel comals with flat bottoms work best on electric and glass-top stoves. Very thin or warped pans can cause uneven heating. In our reviews we always note which stoves each comal is compatible with.

Do I need to season my new comal, and how often?

Most cast iron and carbon steel comals benefit from at least one seasoning layer before the first use, even if they are sold as “pre-seasoned”. After that, regular cooking with a bit of oil naturally builds up the seasoning. If food starts to stick or the surface looks dull, it may be time for a quick re-season.
